According to an Irish News story on the Irish Abroad web site, Dundalk garden designer Paul Martin originated the Lazy Salad Days garden. The greenery consists of edible salad leaves, designed specifically for those considered "lazy gardeners." The creation earned Martin a silver medal from London's Chelsea Flower Show.

 

Martin, with the help of a crew, developed the garden by working sixteen hours a day in order to be finished in time for flower show judges. The garden included walls, flagstones and steps, planted mature olive trees, twenty-five varieties of salad leaves and herbs (with rocket, chard, coriander, chives and lollo rossa). Martin's was the only Irish entry for this go round of the Chelsea Flower Show.

 

In another Irish Abroad article (this one from the Irish Post), it was reported the famous Ulster Fry will no longer be available at Belfast International Airport. The dish has been renamed the Regional Fry and can be had for roughly $5.25, which includes soda bread, rashers (bacon), soda farls, eggs and black pudding.

 

The Ulster Scots Society (now known as Ulster-Scots Agency) is not pleased with the name change. Lord Laird, head honcho of the society, cynically asked on Radio Ulster whether plans were now being made to force Ulster natives to eat an Occupied Six Counties Fry, or would begin singing When Regional Eyes Are Smiling.
