Traditional breakfast in Northern Ireland
1 batch Boxty (Potato Griddle Cakes)
4 eggs
8 pieces Drisheen (Black Pudding)
8 strips bacon
4 link sausages
1/4 LB fresh button mushrooms, sliced
1 tomato, sliced
4 slices Soda Bread
Butter or lard (for frying)
Melt butter or lard to a large skillet; add link sausages and cook for about eight minutes, turning to brown evenly. Add sliced mushrooms, sliced tomato, bacon and Drisheen (black pudding); when just about cooked, add eggs to a separate skillet and cook to preference (over-easy, scrambled, water-poached, sunnyside-up). A few minutes before sausage is cooked, add sliced Soda Bread to skillet along with bacon; fry for about one minute on each side or until golden brown in color. Divide food ingredients between four plates; add a warmed slice of Boxty to each plate. Serve.
