As Time Goes By

The other day I realized I've been posting to Appetizing Muse for three years. It's a tiny amount of time relatively, but a lot can happen in short spaces.

 

Between then and now, my first book was published and I've continued to slog along with writing. I shouldn't say slog along because writing is my passion, but three years seems like an eternity when one is working on new projects and scouting for an agent and a new publisher.

 

My tastes in food have remained much the same, however. Mexican and Japanese rank up there as my favorites, and I don't mind the frequent Irish or Italian meal.

 

I still have very little patience for daily cooking. I despise the drudgery of it, preferring creative spontaneity.

 

Along those lines, I tried the following recipe last week. It was surprisingly good:

 

Avocado-Pineapple Dip

1 medium avocado

3 oz. pineapple cream cheese

1/2 C milk or light cream

Lemon juice

Salt to taste

 

Peel and mash the avocado in a bowl. Add the other ingredients and mix well. Let chill in the refrigerator before using. Because of the dairy ingredients, the dip does not keep long (two to three days at the most).

The spread was delicious on crackers. The ingredients sound odd together, but the combination really works.
