Sonny's Waffles

A few weeks ago I was looking for recipes to add to the Breakfast page at Food Fare when I came across a fan site for actor Maurice Benard (which has since disappeared). Benard stars on the TV-serial General Hospital. His site has a recipe page (apparently he loves to cook), where my eyes zeroed in on one of his specialties: "Pecan Waffles."

 

I have to admit I've been a big fan of General Hospital for years, although there were long stretches of time I didn't tune in to watch the show because of my work schedule. Imagining Maurice Benard as a dab hand in the kitchen seems dichotomous when you think of him as the character he portrays: the darkly sinister mob boss named "Sonny Corinthos."

 

I wrote the webmasters of Maurice Benard Unlimited, requesting their permission to use "Pecan Waffles" for the April update at Food Fare. This is the response I received:

 

I appreciate your kind words about our work at Maurice Benard Unlimited. It's been a labor of love since we created it and we enjoy keeping it as up-to-date as possible. Maurice is a special person and it's an honor to have this site dedicated to him. Please use the recipe if you want. We are always happy to share with other Maurice lovers. I did check out your site and enjoyed reading the many recipes. I might actually try some of them!

Here's the recipe:

 

Sonny's Pecan Waffles

3 C all-purpose flour

1 TBS baking powder

1/4 C granulated sugar

1/2 tsp. baking soda

3 eggs, separated

2 C buttermilk

1/3 C butter, melted

1/2 C vegetable oil

1-2/3 C pecans, finely chopped

Nonstick cooking spray

 

Preheat waffle iron. In a large bowl, sift together flour, baking powder, sugar and baking soda. In a separate bowl, beat together egg yolks and buttermilk; add to flour mixture with melted butter and vegetable oil. Stir gently to combine. In a small bowl, beat egg whites until stiff peaks form; fold into batter. Coat preheated waffle iron with nonstick cooking spray. Pour batter onto hot waffle iron; sprinkle with finely-chopped pecans. Cook until golden brown. Keep warm in oven while remaining waffles cook. Recipe makes four servings.
