Country Cooking

I received the most wonderful cookbook in the mail today. A few months ago I ordered You're Cookin It Country by Loretta Lynn, but was informed the book was out of stock and might never ship. I'd forgotten all about it until the package arrived this afternoon, but after reading through some of the pages I was happy it came.

I'm not a big fan of country music, but was interested in seeing Loretta Lynn's recipes. Her book not only contains scrumptious dishes, but includes anecdotes and memories associated with various foods as well. The volume is absolutely charming. I recommend it highly, whether you enjoy country music or not.

 

Some of the more interesting dishes: Hashbrown Casserole (see below), Country Mornin' Breakfast Casserole, Ozark Mountain Breakfast, Fried Pickles, Sausage Pinwheels, Deviled Ham & Tuna Sandwiches, Tater Cakes, Potato Rolls, Country Fried Cream Corn, Corn Fritters with Yellow Pepper Salsa, Southern Green Beans & New Potatoes, Butcher Holler Steak, Buttermilk Pie and much more.

 

I'm definitely trying this one:

 

Hashbrown Casserole

1 bag frozen hash browns (30 oz.)

8 oz. sour cream

1 can cream of chicken soup (10-3/4 oz.)

2 C shredded cheddar cheese

 

Preheat oven to 350-degrees F. In a large bowl mix the hash browns, sour cream, chicken soup and cheese. Place the mixture in a buttered 13X9" baking dish. Bake for one hour and serve.

The cookbook is a delight. I hope to experiment with many more of its delicious-sounding recipes.
