Breakfast for Dinner

Wilbert is not accustomed to the idea of eating breakfast food for dinner. However, it was a common occurrence when I lived with my parents. At least once a week we would have breakfast delectable's for dinner, such as scrambled eggs and sausages, cheese and mushroom omelets, sourdough hotcakes, bacon and hash browns, or biscuits and gravy.

 

Even though I'm not a great fan of eggs, I will eat Mum's scrambled eggs because they are to die for; my father's omelets and sourdough hotcakes are heavenly, and the hash browns are a special treat my late uncle Mike O'Toole used to prepare using lots of black pepper and Worcestershire sauce. Biscuits and gravy remain my breakfast specialty. I was lucky enough to learn the recipe from my aunt Dee O'Toole, who was born and bred in Shawnee, Oklahoma.

 

However, rather than plunge Wilbert into a wide variety of breakfast food for dinner, tonight I threw together fried ham and pancakes made from a prepared Kroger mix. He was a bit skeptical at first because he feels Bisquick is the best mix, but I slipped in Kroger because it's half the price and just as good. To my surprise, he enjoyed the meal. I‘m hoping we can start having "morning food" for dinner more often.

 

As long as I don't have to cook any dammed eggs . . .
