Biscuits for Diabetics

The other day I mentioned the new recipe page for Diabetics at Food Fare. I have been looking about for dishes I know Wilbert will fancy ever since. My husband is particular to bread and biscuits along with tortillas, so the following recipe will suit him fine:
Flaky Biscuits (for Diabetics)
2 C cake flour
2 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1/4 C cold margarine, diced
3/4 C low-fat buttermilk
Preheat oven to 450-degrees F. In a medium mixing bowl combine flour, baking powder, baking soda, and salt. Cut in margarine with a pastry blender until lumps are pea-sized or smaller. Stir in buttermilk with a fork. Press dough into a ball. On a lightly floured surface roll dough into a 6x10" rectangle. Fold in short ends to meet in the center. Fold dough in half so it is four layers thick. Roll dough into 6" square. With a floured knife cut into 12 squares. Place 1 1/2" apart on an un-greased baking sheet. Bake ten to twelve minutes, until lightly browned. Nutrition information per serving: 106 calories, 16g carbohydrate, 2g protein, 3.5g fat. Diabetic Exchanges: 1 starch, 1 fat.
Tips for tender biscuits:

Use cake flour Use margarine instead of butter.

Fold dough to increase flakiness.

Handle the dough as little as possible.

Stir 1/2 cup shredded cheddar and two tablespoons chopped chives or green onions in with the buttermilk.
