Tomato Basil Bruschetta
4 large slices of slightly stale, leftover bread (1/2"-to-1" thick)
1 large clove garlic, cut in half
Olive oil
2 ripe tomatoes, sliced
8 fresh basil leaves, chopped
Salt & black pepper to taste
Toast the bread under a broiler for one to two minutes, or just until slightly toasted and warm. Rub bread slices with garlic and brush with olive oil. Top with sliced tomatoes and chopped basil leaves; season with salt and black pepper to taste. Serve.
