Welsh Onion Cake
3 to 4 potatoes, peeled & sliced
1 medium onion, finely chopped
Butter or margarine
Salt & black pepper to taste
Peel and rinse potatoes. Slice into potato-chip size. Liberally grease a casserole dish with butter or margarine. Place potato slices in a layer on the bottom of casserole dish. Sprinkle a layer of chopped onion on top, and then repeat process with the rest of the ingredients. Make sure top layer is potatoes. Add pats of butter or margarine on top potato layer, along with salt and black pepper to taste. Cover casserole dish with aluminum foil. Bake at 350-degrees F for about one hour. Serve hot or cold.
