Tilsiter Turnovers
Blytterteig Kase
1 pkg. (1-3/4 oz.) instant white sauce
1/2 C warm water
1 C Tilsiter cheese, shredded
1/4 LB Westphalian or Black Forest Ham, finely diced
1 pkg. (1 LB) frozen puff pastry, thawed
1 egg yolk
In a small bowl, whisk together instant white sauce and warm water. Stir in shredded cheese and diced ham; set aside. Thaw frozen puff pastry according to package directions. Roll out 1/4" thick and cut into eight 4" squares. Place three to four tablespoons of cheese mixture in the center of each square. Brush a 1/2" border of each square with beaten egg yolk. Turn over dough to form a triangle and press border with a fork to seal. Prick top in two or three places. Brush lightly with beaten egg yolk and place on a baking sheet that has been lightly sprinkled with water. Bake turnovers in a preheated 475-degree F oven for about twenty minutes, or until golden brown in color. Recipe makes eight turnovers.

Note: Tilsiter Cheese (also known as Tilsit, pictured above) is made from pasteurized cow's milk. It has a medium-firm texture with a dark yellow rind; often flavored with caraway seeds or peppercorns. Tilsiter is commonly used with hamburgers, potatoes and salads, or melted for various sauces.
