6 or 7 medium celery stalks
1/2 C Swiss cheese, shredded
1/2 C leftover smoked ham, finely chopped
1/3 C mayonnaise
1/2 tsp. prepared mustard
Clean celery under cold water, snipping off brown ends. Cut celery stalks into 3" pieces; pat dry. Mix remaining ingredients together in a bowl. Spread about one tablespoon of mixture in each celery crevice. Cover and refrigerate for one hour before serving.
Variation (pictured below): For celery stuffing, combine ricotta cheese with celery salt, Lawry's Seasoned Salt, fresh or dried dill and sliced green olives.
