4 eggs
1 tsp. fresh tarragon, chopped
4 ounces fully cooked lobster meat, cut into bite-sized pieces
1 pinch cayenne pepper
2 TBS butter
1 pinch salt
Black pepper to taste
In a bowl, beat together eggs and chopped tarragon in a small bowl. Set aside. Season lobster pieces with cayenne pepper. In a non-stick skillet, melt butter over medium-low heat. Add lobster; cook, stirring, until warmed through (about two minutes). Stir in egg mixture. Scramble eggs over medium heat, stirring constantly until set (three to four minutes). Serve.
