2 LBS ground beef
1 onion, chopped
1/2 C celery, sliced
1 can (15 oz.) kidney beans, drained
1 can (28 oz.) tomato or V-8 juice
1/8 tsp. mustard powder
Dash red pepper flakes
2 tsp. chili powder
1 tsp. sugar
1 TBS pearl barley
1 TBS uncooked rice
Water
In a large skillet or cooking pot, brown ground beef. Add chopped onion and sliced celery and simmer until translucent. Drain excess fat; return beef and onions to skillet or cooking pot. Add kidney beans and juice; bring mixture to a slow boil. Stir in mustard powder, red pepper flakes, chili powder, sugar, pearl barley and uncooked rice. Add water as necessary to adjust to preferred consistency (thick or thin chili). Simmer, stirring occasionally, for about twenty to thirty minutes. Serve.
Suggestions: Serve with saltine crackers or cornbread.
