2 TBS vegetable oil
1 LB ground beef (sub with ground turkey if desired)
1/2 LB hot pork sausage
1 onion, chopped
3 garlic cloves, minced
1-1/2 tsp. salt
1/4 tsp. cayenne pepper
1/4 tsp. ground cumin
2 TBS chili powder
2 (8 oz.) cans tomatoes with liquid
1 (8 oz.) can tomato sauce
2 (16 oz.) cans dark red kidney beans with liquid
1 can (5.5 oz.) Spicy Hot V8 Juice
Heat vegetable oil in a large cooking pot. Brown together the ground beef (or turkey), hot pork sausage, onion and garlic. Drain. Return mixture to cooking pot. Add all of the spices, along with the canned tomatoes, tomato sauce, kidney beans and Spicy Hot V8 Juice. Mix well and bring to a boil. Simmer for thirty minutes uncovered, and then for one to two hours covered. If the chili becomes too thick, add additional V8 Juice or water. Serve hot.
Suggestions: Serve with saltine crackers or Cornbread.
