4 slices marbled rye bread
1/4 C Thousand Island dressing
4 slices Swiss cheese
4 slices deli sliced corned beef or pastrami
1/2 C sauerkraut, drained
2 TBS butter, softened
Preheat a large skillet or griddle over medium heat. Spread one side of two bread slices evenly with Thousand Island dressing, followed by equal layers of corned beef or pastrami, sauerkraut and Swiss cheese. Top with remaining bread slices after adding more Thousand Island dressing. Butter the top of each sandwich. Place sandwiches, butter-side down on the preheated griddle; butter the top of each sandwich with remaining butter. Grill until both sides are golden brown, about five minutes per side. Serve hot.
Recipe makes two sandwiches.
