Pumpkin Stew with Peanuts
3 TBS oil
1 onion, chopped
3/4 C tomatoes, chopped
1 C peanuts, chopped
3 C pumpkin, chopped
2-1/4 C water
3 garlic cloves, grated
1-1/2 tsp. garlic salt
2 spring onions, thinly sliced
Fresh coriander leaves (for garnish)
White rice (for serving; optional)
Heat oil in a large skillet. Add onion and sauté for three minutes; stir in tomatoes. Cook until tomatoes reduce to make a thick sauce, about ten minutes. Add peanuts, pumpkin and water. Stir. Bring to a simmer and cover; cook over medium heat for about ten minutes, or until pumpkin is tender. Reduce heat. Mash mixture with a potato masher until smooth. Stir in garlic and spring onions. Simmer for about five minutes. Garnish with coriander leaves.
Suggestion: Serve with white rice.
