Poor Man's Potatoes
4 large potatoes, thinly sliced
1 green pepper, roughly chopped
1 onion, roughly chopped
1/4 C olive oil
Salt to taste
Clean and slice the potatoes (leave skin-on or peel off depending on preference). Soak sliced potatoes in a bowl of water for about twenty minutes to get rid of excess starch, then drain. Heat olive oil in deep frying pan; add potatoes and season with salt. Fry on high heat for about five minutes, turning potatoes several times. Lower the heat. Cover the pan and fry on low heat for about ten minutes. Add the green pepper and onion; stir. Cover pan again and leave to cook on low heat for another ten minutes. The potatoes should be soft when cooked, but with a crispy texture. Remove from pan and serve at once.
