1 LB carrots, sliced
3 TBS extra-virgin olive oil
2 TBS vanilla extract
1/4 tsp. ground cinnamon
1-1/2 C chicken stock
2 TBS brown sugar
In a large skillet, sauté sliced carrots in olive oil. Stir in the vanilla, cinnamon, chicken stock and brown sugar. Cook over medium-low heat until liquids are absorbed and carrots are tender. Recipe makes about six servings.
