Food Fare: Recipes Using Olive OilOlive Oil-Vanilla Carrots

In a large skillet, sauté sliced carrots in olive oil. Stir in the vanilla, cinnamon, chicken stock and brown sugar. Cook over medium-low heat until liquids are absorbed and carrots are tender. Recipe makes about six servings.
