Migas
Fried Breadcrumbs
10 slices bacon, diced small
8 slices of two-day-old bread
Fresh parsley, chopped
3 garlic cloves, finely diced
6 TBS olive oil
Heat olive oil in a skillet over a medium heat. Add diced bacon and cook, stirring constantly. Add chopped garlic and breadcrumbs; stir constantly. Continue to stir until breadcrumbs are browned and coated in oil. Sprinkle chopped parsley on top. Serve.
