Maíz Mexicana
1 quart canned hominy (white or yellow)
1 C cheddar cheese, grated
1/2 C onions, minced
Drain the hominy. In a large baking dish, place alternate layers of hominy, cheese and onions until the dish is filled. Reserve some of the cheese and onion to sprinkle on top just before serving. Prepare sauce (see below).
Sauce:
1 TBS shortening
1 TBS flour
Salt to taste
Chili powder to taste
Water to blend
Combine all of the ingredients in a small bowl, adding just enough water to make the sauce slightly thickened. Pour over the hominy mixture in the pan and bake at 350-degrees F for about one hour. Serve.
