Lobster Mashed Potatoes
1 LB potatoes, peeled (use white potatoes or Yukon gold)
Water
Meat from one 5-ounce lobster tail, chopped
3 TBS butter
1/4 C heavy cream
Salt & white pepper to taste
Place potatoes in a cooking pot and cover with water; bring to a boil over high heat. Cook until potatoes are tender, about ten to twelve minutes. Drain; transfer to a bowl and mash until smooth. Melt butter over medium heat in the same cooking pot used for potatoes. Add chopped lobster and cook for about thirty seconds, stirring constantly. Add heavy cream; season with salt and black pepper. Continue cooking until lobster is opaque and cream is heated through, about two minutes. Add mixture to the mashed potatoes; mix well. Recipe makes enough for two servings.
