Vegetable Soup
3 LBS veal bones
2 QTS water
2 TBS salt
3 carrots, peeled & cut into 3" pieces
1 small turnip, peeled & cut into chunks
8 scallions, cut into large pieces
1 C fresh (or frozen) string beans
1 C tomatoes, cut into quarters
Black pepper to taste
Saltine crackers (for serving)
In a large cooking pot, simmer veal bones in water and salt for about one hour covered, stirring occasionally. Add carrots, turnip, scallions, string beans, tomatoes and black pepper. Simmer for another hour, or until the vegetables are tender. Remove veal bones from the soup and discard. Place the cooked vegetables in a food processor; puree mixture and return to the cooking pot to keep warm. Serve in large bowls with saltine crackers.
