Avocado Salad
2 large avocados
1 green onion, chopped (use greens)
1 tomato, diced
4 TBS olive oil
1 TBS lemon juice
1/2 tsp. salt
1/2 tsp. vinegar
1/2 tsp. black pepper
In a bowl, whisk together onion, tomato, olive oil, lemon juice, vinegar, salt and black pepper (for dressing). Cut avocados in half lengthways; remove pits. Arrange avocados on four salad plates and spoon dressing over the top. Serve.
