1 C (about 8 oz.) ice cubes
6 TBS (about 1.13 oz.) ground coffee
1 C (8 oz.) just-boiling water
Syrup to taste (see following recipe)
Milk to taste
Place water into a cooking pot over high heat; remove from heat just before water begins to boil. Line a Chemex coffeemaker with a filter; fill with ground coffee. Slowly pour almost-boiled water over the grounds; make sure all grounds are soaked. Allow the coffee to drain until regular dripping stops; remove the filter and used grounds. Serve with milk and/or syrup. Recipe makes enough for one serving.
Iced Coffee Syrup (for Kyoto Iced Coffee)
1/4 C instant coffee granules
2 C hot water
1 can (14 oz.) sweetened condensed milk
Combine instant coffee granules with the hot water; stir until dissolved. Add the condensed milk; mix well. Store in an airtight container or jar in the refrigerator until ready to use.
