Moroccan rice dumplings
3/4 C white rice
1/4 LB ground beef or lamb
1/4 C shelled walnuts, ground
3 TBS fresh parsley, chopped
2 eggs, beaten
1 tsp. ground cinnamon
1 tsp. ground mace
1 tsp. ground nutmeg
Salt & black pepper to taste
Cheesecloth
String
Combine all the ingredients in a bowl. Place mixture in a large square of cheesecloth; wrap loosely and tie securely with string. Add to simmering soup or stew; allow to cook for about forty minutes. Serve as a side dish.
