Jack O'Lantern Sandwiches

• 1/2 C mayonnaise

• 2 tsp. dry Italian Salad Dressing Mix

• 16 slices white bread

• 8 slices American cheese

• 1 LB thin-sliced deli chicken or turkey

• Lettuce

In a bowl, thoroughly mix together mayonnaise and the dry Italian Salad Dressing Mix. Using a knife, spread mixture onto one side of each slice of bread. Top with a slice of American cheese, deli chicken and lettuce leaves. Place remaining bread slices on top. Firmly press a 4" pumpkin shaped cookie cutter into each sandwich. Remove top slice of bread from each sandwich; cut eye shapes in a triangle and cut mouth shapes for each. Serve. Recipe makes enough for four sandwiches.
