Omani carrots & pistachios
10 carrots
1-1/2 C milk
1 can (14 oz.) sweetened condensed milk
2 TBS clarified butter (ghee)
1/2 C shelled pistachio nuts, chopped
1/4 C raisins
Combine carrots and milk in a deep cooking pot; bring mixture to a boil. Reduce heat to simmer and cook, stirring occasionally, until milk dissipates. Add the sweetened condensed milk; cook over low heat, stirring occasionally, until mixture becomes dry. Add the clarified butter (ghee); mix well and cook for another ten minutes. Garnish with chopped pistachio nuts and raisins. Serve hot.
