Ham & Egg Cups
5 C leftover mashed potatoes
6 slices leftover cooked ham
6 eggs
1/4 C butter, cut into small pieces
1 tsp. fresh parsley (sub with dried flakes)
1 TBS prepared or leftover Hollandaise Sauce
Preheat oven to 350-degrees F. Coat bottom of a casserole dish (12x12") with butter. Spread mashed potatoes on bottom of dish (creating a depth of about two inches). Press ham slices into mashed potatoes to form cup shapes. Place egg into each ham cup; dot mashed potatoes with butter. Sprinkle parsley on top. Bake until eggs are set, about twenty-five to thirty minutes. Place ham cups and mashed potatoes onto a serving plate and drizzle with Hollandaise Sauce.
