Green Tea Cake
2 eggs, beaten
1 C flour
1/2 C butter
1 TBS matcha (finely-ground green tea)
1/2 tsp. baking powder
Nonstick cooking spray
Preheat oven to 350-degrees F. In a bowl, cream butter and then stir in sugar. Gradually add beaten eggs and stir well. Sift flour, baking powder and green tea powder together and add to the egg mixture. Pour batter into a loaf pan coated with nonstick cooking spray. Bake for about thirty to forty minutes. Allow to cool slightly before slicing and serving.
Note: "Matcha" is finely-milled green tea used to color or flavor foods such as mochi and soba noodles, green tea ice cream and wagashi (confectionery). It is a finely-ground, high-quality green tea not to be confused with tea powder or green tea powder.
