Sudanese broad bean paste
1 LB broad (fava) beans
1 TBS salt
2 dates
1/2 C sesame seed oil
1/2 C feta cheese, cubed
1 tsp. chili powder
Soak the dried broad beans in water for at least three hours. Drain beans and place in a large cooking pot. Cover with water; bring to a boil. Reduce heat to simmer; cover and cook for about two-and-a-half hours, or until beans are soft. Drain beans. Place in a bowl or pestle and mortar; lightly mash beans. Mix-in salt, sesame oil and feta cheese to form a paste.
Suggestion: Serve with Tamia (Sudanese chickpea patties).
