Chadian okra & sweet potatoes
20 fresh okra, chopped
3 tomatoes, chopped
1-1/2 C fresh spinach & basil mix, finely shredded
1 sweet potato, cubed
1 eggplant, cubed
3/4 C peanut butter
1 beef or chicken bouillon cube
Salt, black pepper & cayenne pepper to taste
In a large cooking pot, add vegetables and cover with water. Add salt, black pepper and cayenne pepper. Bring to a boil; reduce to simmer and cook for about thirty minutes, or until vegetables are nearly tender. Remove one cup of the stock and mix with peanut butter to form smooth sauce. Add peanut butter mixture and stock cube to vegetables and simmer for about ten minutes, or until sauce has thickened.
Suggestion: Serve with rice.
