Traditional Dessert
1/2 C rolled oats
1 C heavy cream
1/4 C confectioners' sugar
1/2 tsp. vanilla
1 C fresh raspberries
1 TBS dark rum
4 fresh mint leaves (for garnish)
Preheat oven to 350-degrees F. Spread oats on a baking sheet in a thin layer. Toast in oven for about ten minutes, or until nut-brown in color. Set aside to cool. In a bowl, whip heavy cream to firm peaks; fold in confectioners' sugar, vanilla and toasted oats. Spoon mixture into four serving bowls or glasses and top with raspberries. Drizzle dark rum over each serving and garnish with fresh mint leaves.
Note: Cranachan is similar to the English dessert known as Eton Mess.
