Mashed Potatoes & Cabbage

Heat 1/2-inch of water to boiling in a cooking pot. Stir in the cabbage, cover and heat to boiling again. Cook the cabbage about five to eight minutes, or until tender. Drain and return cabbage to cooking pot. Mix mashed potatoes in with the cabbage; add green onions, salt and black pepper. Stir in the butter and parsley. Serve.

Note: Colcannon is a dish made from mashed potatoes, kale or cabbage, butter, salt, and pepper. It can contain other ingredients such as milk, cream, leeks, onions, chives, garlic, boiled ham or Irish bacon. At one time it was a cheap, year-round staple food. An old Irish Halloween tradition was to serve colcannon with prizes of small coins concealed in it, as the English do with Christmas pudding.
