Clam Hash
6 slices bacon
4 TBS butter
2 shallots, finely chopped
1/2 small onion, finely chopped
2-1/2 C cooked potatoes, peeled & diced
2-1/2 C canned clams, minced
Salt & black pepper to taste
4 egg yolks
3/4 C cream
2 TBS butter, softened
In a skillet, cook bacon until crisp. Drain bacon and crumble. Pour off bacon grease from skillet; melt butter in skillet with shallots and onion. Add diced potatoes; increase heat to medium and cook until browned. Mix in clams and bacon, along with salt and black pepper to taste. Using a spatula, press mixture flat. In a bowl, beat together egg yolks and cream. Pour over clam/potato mixture. Cover skillet and cook for about three minutes, or until eggs are just set. Dot mixture with softened butter; place under broiler until just browned. Serve hot. Recipe makes enough for four servings.
