Egyptian sweet & sour okra
1 LB okra
2 TBS olive oil
1 TBS honey
Salt & black pepper to taste
1 TBS lemon juice
1/2 C water
Wash okra; pat-dry with paper towels. Discard blemished or hard okra pods. In a heavy skillet, heat the olive oil. Add okra and sauté for about three to five minutes, stirring and turning okra. Add honey, salt, pepper, lemon juice and water. Cover skillet and lower heat. Simmer for about fifteen minutes, adding more water if necessary. Serve.
