Jordanian spice blend
1/4 C black peppercorns
1/4 C allspice berries
2 tsp. cinnamon
1 tsp. nutmeg
Using a mortar and pestle, grind together the peppercorns and allspice; blend with the cinnamon and nutmeg. Store mixture in a sealable container in a dry place. Baharat will lose pungency in time, but if properly stored it can be used for several months.
