1 C Mitoku Amazake*
1-1/2 C almond milk
3 TBS toasted almond butter
Pinch sea salt
1 tsp. vanilla
1/8 tsp. almond extract
Place all ingredients in a blender; puree until smooth. For a smoother texture, pour mixture through a fine-mesh strainer to remove rice hulls. Serve well chilled. Recipe makes about two cups.
*Note: Mitoku Amazake contains sweet brown rice, rice koji (natural rice mold culture) and spring water. Mitoku Amazake concentrate is sold in 8.8 ounce pouches at most pouches most Asian specialty stores. The Yuuki brand is common.
