Colonial American
2 C all-purpose flour
1/2 tsp. baking soda
1 tsp. baking powder
1/2 TBS powdered ginger
1/2 tsp. ground cloves
1/2 tsp. cinnamon
1/2 tsp. salt
1/2 tsp. white pepper
2 TBS shortening
3/4 C sugar
2 eggs, beaten well
1/3 C molasses
1/4 C buttermilk
In a mixing bowl, sift together the flour, baking soda, baking powder, ginger, cloves, cinnamon, salt and white pepper. Set aside. Mix shortening and sugar together in a separate bowl. Beat eggs into the mix, and then add molasses. Stir into flour mixture, alternating with the buttermilk. Mix well. Pour batter into greased muffin tins and bake at 350-degrees F for about thirty minutes, or until a toothpick inserted into the center of a muffin comes out dry.
