Shearing Cake
1 LB self-rising flour
8 oz. butter
1/2 tsp. salt
2 tsp. baking powder
12 oz. sugar
Zest of 1 lemon
3 tsp. caraway seeds, lightly crushed
1/2 pint milk
2 beaten eggs
Sift the flour into a mixing bowl; rub in the butter. Add salt, baking powder, sugar, lemon zest and caraway seeds. Stir in milk and beaten eggs. Mix well. Pour batter into a greased cake tin or loaf pan; bake at 325-degrees F for thirty minutes. Reduce the oven temperature to 300-degrees F, and bake for another two hours.
