Qatari Coffee
3 C water
2 TBS ground Arabic coffee*
3 TBS cardamom, coarsely ground
5 whole cloves, coarsely ground
1/4 tsp. saffron
1 tsp. rosewater
Bring water to a boil in a medium saucepan. Add coffee and ground cardamom; bring to another boil over low heat and brew for ten to twelve minutes. Add ground cloves; stir and boil for another five minutes. Remove from heat for about five minutes to allow coffee to settle. Stir in saffron and rosewater. Strain mixture into a warmed carafe or thermos. Pour into individual cups and serve.
*Note: Arabic coffee is usually prepared using water, lightly-roasted coffee with ground cardamom, cloves, rosewater and saffron. It is brewed in a traditional dallah coffee pot (pictured at right) and then allowed to steep in a pre-warmed thermos flask. The coffee is typically served plain (qahwah sadah) without milk or sugar. The dallah coffee pot is also commonly used in Iraq and Syria.
