Mushroom & Provolone Sandwiches
6 Kaiser Rolls or baguettes
2 TBS bacon, chopped & uncooked
1 TBS onion, chopped
1 small can sliced mushrooms, drained
12 slices Canadian bacon (1/4" thick)
6 slices Provolone cheese
6 slices green pepper (cut into rings)
Salt & paprika to taste
Split the Kaiser rolls; save the tops (to accompany open-faced sandwiches). Set aside. Combine bacon, onion and mushrooms in a skillet. Cook uncovered over medium-heat until the onion is tender, stirring once. Arrange two slices of Canadian bacon on each Kaiser Roll; top with bacon-mushroom mixture. Top with the cheese, placing one green pepper ring atop each cheese slice; sprinkle paprika inside of the pepper ring. Place sandwiches on a broiling pan; broil in the oven for about four to five minutes or until the cheese starts to melt, the meat is hot and the edges of the rolls brown slightly. Serve hot with saved roll tops.
