Mushroom Broth with Brown Rice
1 can (16 oz.) vegetable broth
2 C water
2 C fresh mushrooms, sliced small
1 C snow peas, trimmed & cut in half
1 C raw, quick-cooking brown rice
1 TBS soy sauce
Black pepper to taste
In a large saucepan, combine the broth with two cups of water. Bring to a boil. Slice the mushrooms. Prepare the snow peas and green onions. When broth and water comes to a boil, add the mushrooms and rice. Lower the heat to medium and simmer for five minutes. Add the snow peas, green onions and soy sauce. Simmer for another five minutes; season with black pepper to taste. Serve.
