4 boneless skinless chicken breasts
1 pkg. taco seasoning mix (or prepare homemade mix)
2 TBS oil
6 large flour tortillas, heated
2 C Monterey Jack Pepper cheese, shredded
1 small onion, chopped
2 tomatoes, chopped
3/4 C Ranch salad dressing
Slice chicken breast into strips; toss with taco seasoning. Heat oil in skillet; add chicken and cook for about six minutes, or until done. Dividing evenly, layer chicken and remaining ingredients on heated tortillas. Fold tortilla over, tuck in the sides and roll to close. Repeat with remaining tortillas and filling. Serve.
