Somali Cherry Tomato Sauce
2 TBS olive oil
1 medium onion, chopped
1-1/2 LBS cherry tomatoes, whole
1 hot chili pepper, finely diced
4 small okra, sliced thin
2 garlic cloves, minced
1 tsp. lemon juice
5 basil leaves
Salt to taste
Heat olive oil in a large skillet. Add onions; sauté for two or three minutes. Add cherry tomatoes, chili pepper and okra. Cook over medium heat until tomatoes begin to wrinkle. Stir mixture; cook an additional fifteen minutes. When tomato skins begin to split, add salt, garlic and lemon juice. Using a wooden spoon, mash the contents of the skillet. Add basil leaves; simmer for five minutes.
Suggestions: Serve with Muufo Baraawe (Somali Flatbread) or with pasta.
