1 C butter
3/4 C sugar
Zest of 1 lime (or 1 tsp. pure lime oil)
1 egg, beaten
2 C flour, sifted
Pinch of salt
Cream the butter and sugar together. Add the lime zest (or pure lime oil); mix well. Then add the egg and the flour, mixing well after each addition. Roll out mixture and cut into shapes using Christmas cookie cutters or the floured rim of a glass. Place the formed dough onto a greased cookie sheet or baking pan; bake at 325-degrees F for about twenty minutes. Cool on the cookie sheet for ten minutes before transferring to a rack. The treats can be eaten as they are, or can be frosted to taste.
Note: Variations of the shortbread include orange and lemon; simply use the zest from either to make the variation.
