1-1/2 C cold butter, cut into cubes (approx. 3 sticks)
2 tsp. vanilla extract
1-3/4 C flour
3/4 C granulated sugar
2 tsp. baking powder
Parchment paper
Nonstick cooking spray
Filling (Kiwi Jam):
2 Kiki fruit, peeled & sliced
4 tsp. granulated sugar
Juice of 1/2 lemon
Line a baking pan with parchment paper; lightly coat with nonstick cooking spray. Set aside. In a large bowl, sift together flour, sugar and baking powder and stir until mixture is thoroughly combined. Using hands, rub cubes of butter through the dry mixture. Press half the crumb mixture into the bottom of prepared baking pan and set aside.
Filling (Kiwi Jam): Peel kiwi and then slice into a bowl; using a fork, mash kiwi until they become similar to paste in consistency. Pour the kiwi into a cooking pot on medium high heat; stir and cook mashed kiwi. Pour sugar and lemon juice into the cooking pot; stir to mix with kiwi and continue cooking until bubbles or foam appear on surface. Remove cooking pot from heat. Pour kiwi jam on top of crumb mixture in baking pan. Pour remaining crumb mixture on top until it covers all of the kiwi jam.
Bake for about forty to fifty minutes at 350-degrees F or until top turns golden brown in color; allow to cool on a rack. Cut into squares and serve warm, or refrigerate to serve chilled.
