Carpathian Mountain Cream Cake

 

Dough:

Preheat oven to 375-degrees F. Lightly coat a 13x9-inch pan with cooking spray and then line with parchment paper.

 

Dough: In a medium saucepan, bring water, butter and salt to a boil. When butter has melted, remove from heat. Using a wooden spoon, add flour all at once. Return to stove and stir over low heat for two or three minutes, or until dough forms a ball. Remove from heat and stir in eggs one at a time, mixing well after each addition. Batter should be smooth and shiny. Add baking powder. Place dough into prepared pan; do not smooth. Bake for thirty minutes. Remove from oven and pierce top all over with a skewer. Bake another ten minutes, or until top is golden brown and dry. Remove from pan and allow to cool completely on a wire rack before filling.

 

Filling: In a medium saucepan, bring milk, sugar, potato starch and flour to a boil, stirring often. Reduce heat and continue to cook and stir until mixture thickens, about two minutes. Stir in vanilla. Place in an ice water bath to cool to room temperature, stirring occasionally. Make sure filling is completely cool before adding 2-1/2 sticks of softened butter.

 

Assembly: Split cooled dough in half horizontally. Place bottom half in baking pan and pour filling over the top, spreading evenly. Top with the other half of dough and refrigerate until well chilled. When ready to serve, cut into rectangles and dust with confectioners' sugar. Refrigerate leftovers.
