Kuwaiti date & walnut cake
2 C seedless dates
1-1/2 C flour
2 large eggs
1 C milk
4 oz. butter, melted
3/4 C sugar
1 tsp. baking soda
1 tsp. cinnamon
1 C walnuts, unsalted
1 C almonds, chopped
Glaze for Kaikat Al Tamar:
1 C unseeded dates
2 C hot water
Preheat oven to 350-degrees F. Add milk, 2 cups of seedless dates, eggs, butter and sugar in a blender; blend until fully mixed. Add walnuts to mixture; blend again until walnuts are thoroughly mixed in with other ingredients. Pour mixture into a greased cake pan. Allow to stand for about fifteen minutes. Bake for forty-five to sixty minutes, or until a toothpick inserted into cake comes out dry. Cool the cake on a wire rack.
Glaze: Prepare glaze by blending 1 cup unseeded dates with hot water until smooth. Strain water from the mixture. Pour glaze over cooled cake; garnish with walnuts. Slice and serve.
