Persian Date Cakes
1-1/4 C vegetable oil
2 C wheat flour
2 C pitted dates
1/2 C powdered sugar
1/2 C walnuts, halved
1 tsp. ground cinnamon
1/2 teaspoon cardamom
1 TBS ground pistachios
Heat oil in a skillet until hot; add wheat flour and reduce heat. Stir until flour turns golden. Remove from heat; allow to cool slightly. Add powdered sugar, cinnamon and cardamom to flour; mix well. Pour half of the flour mixture into a baking dish; flatten surface with the back of a spoon. Insert a walnut half inside each date; place dates on top of the flour mixture in baking dish. Cover dates with remaining flour mixture; flatten surface with the back of a spoon. Sprinkle ground pistachios on top. Cut into diamond-shaped pieces and serve. Recipe makes about four servings.
