Christmas Ham
1 salt-cured ham (7 to 9 LBS)
2 egg yolks
1 TBS brown sugar
6 TBS grainy mustard
6 TBS finely crumbled gingersnaps or breadcrumbs
Preheat oven to 350-degrees F. Rinse ham under cold water to remove excess salt; pat dry. Place ham pork rind-up in a heavy roasting pan. Bake ham until internal temperature is 160-degrees, about four to five hours. Remove from oven; increase heat to 450-degrees F. Slice rind off of the ham. In a bowl, whisk together egg yolks, brown sugar and mustard; spread evenly over entire surface of ham. Sprinkle with crumbled gingersnaps or breadcrumbs until covered. Return ham to oven and cook an additional fifteen to twenty minutes or until golden brown.
